Ingredients: °2 large courgettes, approximately 300 grams
°1 Shallot or onion
° One optional garlic clove
°Aromatic herbs: coriander, mint, basil, or flat-leaf parsley
°1 egg
°1 teaspoon flour
°2 teaspoons of vegetable or traditional liquid cream
°Salt with pepper
Curry, paprika, Espelette pepper, and so forth.
°Oil or butter for frying
Prepare the vegetables by washing, drying, and grating them. Squeeze them firmly to extract the juice, then place them in a fresh tea towel.
Chop the parsley and the onion or shallot finely.
Stir in the grated zucchini, followed by the cream and the entire egg. Stir in the flour, salt, pepper, and spices.
Place tiny mounds of the preparation in a frying pan with 20 g of butter and a small amount of sunflower oil. Flatten them out.
